Frozen shredded hashbrowns are best. You are going to find it helps the breakfast sausage balls hold the shape better once your roll and bake them.

Hashbrowns are shredded potatoes. You are very welcome to shred your own potatoes for the recipe. Just know the potatoes will stay soft in the center of the balls, and the outside becomes a bit crispy.

Grab a cookie scoop for this. You are going to create evenly sized balls that will bake up evenly.
I used the tablespoon size cookie scoop. Feel free to use any size of cookie scoop, just adjust the baking time as needed to fit the size of your balls.

How to Store Sausage Hashbrown Bites
The hashbrown bites need to be refrigerated in an airtight container. You can place it in the fridge for 2-3 days.
Then reheat as you would like for a simple breakfast option. Consider pairing it with a fruit salad for a complete breakfast.
Can I freeze hashbrown bites?
Bake up the sausage balls and then allow them to cool. Then place in a freezer bag or airtight container that is freezer friendly.
Freeze for up to 4-5 months. Then thaw in the fridge overnight, or heat them up straight from being frozen.
Can Sausage Hashbrown Bites be made ahead?
You can make up your balls in advance and then store them in your pan and cover them with a lid or foil. Then add an additional 10 minutes to the baking time and place the pan in the cold oven and cook.
You can make your bites up to 24 hours in advance and kept raw.
Or you can bake them up and then just store the fully cooked balls in the fridge and then reheat right before serving.
Can you freeze sausage hashbrown bites before they are cooked?
You can freeze these sausage balls if you want. Just flash and freeze the balls for 1 hour. Once the balls are hardened freeze them for up to 6 months.
Then place the frozen hashbrown and sausage balls on a baking sheet and bake from frozen. Use 400 degrees and bake for an additional 15 minutes or until the balls are fully cooked.
How long can these be stored in the fridge?
The balls can only be stored for 2-3 days. You are going to find the sausage is the first thing to spoil. Always use your best judgment in terms of the quality of the leftovers.
